Turkish food stems from Ottoman cuisine, a blend of Balkan, Middle Eastern and Central Asian gastronomy. Each pocket of Turkey boasts its own unique specialties, from the Agean region’s focus on rice and seafood to the south-east’s love for mezes (small dishes), kebabs and dough-based desserts such as baklava. Olive oil, nuts, yoghurt, eggplant and lentils are other staples at Turkish mealtimes.
