South African or “rainbow” cuisine was nick-named for the many cultures that have visited the country over time and left a mark. Some popular dishes include crocodile sirloins or fried caterpillars, or the safer biltong (similar to jerky) or boerewors (sausages grilled on an open flame). Common ingredients are chicken, limes, garlic, ginger, chilli, tomatoes and onions. Milk and milk products are also found often and have been since pre-colonial times. The national dish is considered by some to be the Bobotie, a dish of spiced minced meat baked with egg and curry powder to give it that “tang.”
