Russia has plenty of diverse food offerings – what else would you expect from the largest country in the world, and the former playground of the Czars? Pour a glass of vodka and tuck into such hearty specialties as blini with caviar or sour cream (or smetana), meat-filled pelmeni dumplings, potato-filled vareniki, and cabbage soup (shchi). And while borscht is Ukranian in origin, the beetroot soup is certainly just as popular in Moscow. Then there’s the food of the Caucasus, from Uzbek palov – a rice pilaf paired with meat – to Azerbaijan food with plenty of shared traits with Middle Eastern and Turkish/Greek cuisine.
