Nations nestled along the Mediterranean Sea, including Algeria, Egypt, Libya, Morocco and Tunisia, are known for their use of cumin, cinnamon and saffron to add a bit of spice to their dishes. Libya and Egypt are heavily influenced by Turkish culture while Algeria and Tunisia have a more French and Italian flair and Morocco has remained pretty influence-free and blazed its own path. Halal meats are common as well since the region is predominantly Muslim. The best known dish is couscous, and you’ll find that mixed with everything from goat to raisins.
