Korean food is heaven for those loving diversity, with restaurant meals often served with a variety of small picklings and tastes to accompany the main event. Cook-your-own Korean barbecues have also rapidly grown in Sydney’s Koreatown and expanded to other capital cities, with menus often featuring the popular bulgogi (marinated beef), galbi (beef shortribs) and kimchi pancakes, whereas at the fine-dining level, international celeb chefs like Momufuku’s David Chang and Kogi’s Roy Choi are creating greater awareness for modern Korean dishes. At home, there may be more focus on singular meals like japchae, tukguk (rice cake soup), or bap (rice) dishes. The country’s famed spicy pickled cabbage, kimchi, is, of course, served with many meals, and comes in countless variations.
