The North Indian diner may be the most prolific dining experience, with a little bit of Southern Indian food added to the mix, but there are so many more regional flavours to enjoy from home kitchens. Goa is rich in seafood recipes, Assam in sour tastes, Kerala resplendent in coconut curries, Punjab for its tandoor meats and paneers, Karnataka for its masala dosas…. the list goes on and on. Then there are the regional variations of everything from biryani to daal (a.k.a. dal or dahl), the impressively wide offering of Indian sweets, and Anglo-Indian favourites like the ever-popular chicken tikka masala.
