El Salvador, Guatemala, Belize, Panama, Costa Rica, Honduras, and Nicaragua make up Central America and each has its own cuisine to add to the mix. Apart from the common combination of rice, beans and meat this region is also known for its use of coconut, avocados, sweet potatoes, plantains, jicama and chayote. Aztec and Mayan influences are still strong and their maize roots are incorporated into many national dishes. Australia is even starting to see more Guatemalan tamales and Honduran baleadas as Central American food breaks out from under the all-encompassing Mexican food label.
